I saw a similar recipe on Pinterest for pumpkin muffins, but it used a can of pumpkin and a box of yellow cake mix. No eggs or nuts. So, I created my own recipe and they were fantastic! One box of Spice Cake Mix, two eggs, 1 can of pumpkin puree and a cup of chopped pecans. I cooked them for about 18 minutes in muffin cups within cupcake pans. They were even better the second day. I will definitely make these again. :-)
Can't wait to try it! I used to work next door to a bakery that had the best pumpkin muffins -- for about 6 weeks in the fall every year... I really miss those pumpkins... now maybe I can make something that will rival them and not have to wait until October/November!
